The highly acclaimed Mediterranean diet was born here in the sun-kissed south of Italy, and a look around the agricultural fields that surround our masseria highlight the abundance of vegetables that will make their way to your plate, from farm to table – with plenty of local restaurants offering zero-kilometer culinary concepts. While Puglia is indeed a celebrated culinary destination for carnivores and pescetarians, it has always been a hotspot for vegans and vegetarians for years. So what can you expect to experience while on holiday? Some of our favorite vegetarian-based dishes include creamy fava-bean mousse, boiled or sautéed chicory, stuffed zucchini flowers with ricotta, crunchy ‘cocomero Puglieses’ (an ‘Apulian watermelon’ that is essentially local cucumber), turnips and cacioricotta cheese often served with orecchiette, and even sweet red carrots native to Polignano a Mare – great as snacks or side dishes.
If you like to cook on your own and want to experiment with local ingredients in the comfort of your home here in Puglia, we can purchase fresh produce for you and deliver them prior to your arrival or after you settle in. Each apartment suite has a private patio and terrace and on request, guests can use the sleek kitchen in the grotto complete with all the utensils and table settings and even a wood-fired pizza oven. You can turn on the sound system and enjoy your own music, too!
